Mexican Beef Sliders

Ingredient List

  • 1 lb ground beef (at least 80% lean)
  • 1/2 cup diced yellow onion
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 2/3 cup water
  • 1/3 cup from 1 bottle (9 oz) Old El Paso™ Mild Taco Sauce
  • 1 package (12 to 16 oz) 12-count dinner rolls (not pulled apart)
  • 1/3 cup from 1 can (12 oz) Old El Paso™ Hot Jalapeño Slices
  • 1 package (8 oz) sliced cheddar cheese
  • 1 tablespoon butter, melted
  • Shredded lettuce, chopped tomatoes, Old El Paso™ Mild Taco Sauce and/or Old El Paso™ Zesty Ranch Sauce, as desired

Preparation

  1. Heat oven to 375°F; spray 13x9-inch (3-quart) glass baking dish with cooking spray. Set aside.
  2. In 10-inch nonstick skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring frequently, until beef is thoroughly cooked and onion is softened; drain. Stir in taco seasoning mix and water; heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes, stirring frequently, until thickened. Remove from heat; stir in 1/3 cup taco sauce.
  3. Slice sheet of dinner rolls in half horizontally; place bottom half in baking dish. Spoon beef mixture over rolls; top evenly with jalapeño slices and sliced cheese. Place top half of rolls over cheese.
  4. Brush melted butter over tops of rolls. Bake 11 to 13 minutes or until tops of rolls are golden brown and cheese is melted. Let stand 5 minutes; cut into individual sliders, and top with remaining ingredients.

Expert Tips

  • Colby-Monterey Jack cheese blend is a great swap for cheddar cheese in these sliders.
  • To amp up the flavor and add a little texture, top your Mexican Beef Sliders with lettuce, tomatoes and Old El Paso™ sauces.
  • Not a fan of heat? Leave out the sliced jalapeño peppers. Or if you’re the ultimate heat seeker, add more peppers, or swap the mild taco sauce for Old El Paso™ Medium Taco Sauce.
